Toddler Approved Seed Crackers

This month’s topic is mouth watering, crunchy and delicious. It is a treat inspired from my mother’s recipe, that’s now a staple in my home too. Do you, or your toddlers, fancy something savoury and crunchy but don’t want store bought crackers, full of ingredients you can't pronounce? I’ve got you covered with my healthy homemade seed crackers, that are the perfect nutritious snack for you and your toddler's lunch box. Packed full with seeds, water, salt to taste… and that’s it!

When cooking these, I find it great to get my toddler involved in the kitchen, as this recipe is super simple and easy. I love watching her get excited and develop a healthy relationship with nutritious food so young. My 20 month old daughter does all the scooping, pouring, mixing and …eating of the recipe. Then I'll take charge when it comes to the oven to avoid any potential accidents.

Recipe

INGREDIENTS

  • 4 Tablespoons Chia Seeds
  • 1 tablespoon flaxseed meal
  • ¼ cup hemp seeds
  • 1 cup sunflower seeds
  • 1 cup pepitas ( pumpkin seeds )
  • 1 1/2 cups filtered water
  • Salt to taste
( makes one tray )

    METHOD

    1. Preheat oven to 180 degrees
    2. Line baking tray with baking paper
    3. Measure out dry ingredients &  mix together
    4. Add water, salt and mix well
    5. Let sit for 10-15mins until mixture becomes gluggy
    6. Stir and spread on baking tray
    7. Bake for 40 mins, then pull out. cut cracker shape and put back in for 10 mins
    8. Cut through, flip & bake for another 5-10 mins for extra crunchy
    9. Let cool and serve or container and store in freezer

The flexibility of this recipe is great as long as you keep the chia and water to bind the crackers together you can alternate the type of seeds, herbs or spices you might like. If you find your mixture doesn't go gluggy enough, add some more chia. I sometimes find this, especially if Sunny steals a few spoonful's while mixing!

For serving you can add many toppings, some we like are: avocado, tomato, cheese, nut butters or even use them with dips on a platter.

One last Tip: keep any crumbs or crushed crackers, they make the perfect crunchy seed garnish for salads or as a nibble mix for your toddler! I hope you enjoyed this recipe or found inspiration from it to get in the kitchen to make some healthy snacks for you and your little one.

    Until next time

    Skye
